Modeling low to high poly--is that okay?
I think the title speaks for itself but in my learning, I'm finding that I like the low to high poly method right now. I've been looking for tutorials to help my thought process on it and I only find high to low poly. Is that because modeling low to high is a bad idea?

Some people work low to high, but most people seem to prefer high to low modelling.
Either is fine and both have advantages over the other, but neither is wrong.
Sorry, was kind of tired and think I completley missunderstood your question and only made confusion. metalliandy is right and there isnt any method thats wrong or bad. I think you should go with that how works best for you, as for everything but always be curious and try new ways around, never know when something neat happend to be found.

I think you looking at making game assets and baking highpolygon to a lowpolygon mesh, to add details in a normal and/or occlusion map. Today can it also be used for tessellation but this is quite advanced. You have to get your understanding of making a good mesh with a clean topology before jumping ahead. Less polygons will always be easier to work with and its important to block out the basic shapes before adding details/more topology on your mesh. I think you might be interested in Sub-D and Proxy modelling, also tutorials regarding making a good basemesh before sculpting.
I would recommend an proper game or media education.
Also proper video training and books is worth a lot to get more experience and comfort with 3d.
